Cabernet Sauvignon

In Australia Cabernet Sauvignon rose to fame from the 1960’s onwards, where it was admired for its elegance, structure and purity of fruit. It quickly became established as the most stylish of all the red varieties, known alongside Chardonnay for its class and distinction.

Cabernet Sauvignon requires care and attention in the vineyard, however its thick skin makes it remarkably resilient to adverse climatic conditions.

Winemakers often age Cabernet Sauvignon in a mixture of French and American Oak. Traditionalists prefer to exclusively use French Oak.

Climate has a major impact on the sensory characteristics of the variety. In cooler climates, minty and leafy characters combine with blackcurrant and red berries. In warmer climates, chocolate and tobacco characters are expressed.

Australia produces a distinct array of Cabernet styles, unlike any others in the world.
